Development of Core Indicators for Health Education Materials for Preschool Children: A Case Study of the 'My e-Plate' Teaching Platform

Abstract—This study focuses on the development and implementation of a digital teaching platform, "My e-Plate", designed to enhance nutrition education for preschool children in Taiwan. The platform integrates gamification, repeated exposure, and food-themed pictures to create an engaging and developmentally appropriate learning experience. A mixed-method approach was employed to validate the platform's content, beginning with expert review and followed by the Fuzzy Delphi Method to gather insights from preschool caregivers in Taipei City and New Taipei City. The analysis identified five key dimensions and 31 indicators that inform the platform's effectiveness and usability. Findings emphasize the role of interactive digital tools in promoting healthy eating habits and fostering supportive learning environments. The total fuzzy numbers ranged between 0.701 and 0.763, indicating that expert consensus values were all above 0.70, confirming they meet the standard threshold. The overall effect is significant, with the majority of indicators' total values (µT) exceeding 0.70, demonstrating that the 11 experts generally believe that the digital teaching platform constructed in this study has a positive and significant impact on enhancing digital learning outcomes, promoting health behavior change, and improving the healthy eating environment. This study provides practical recommendations for optimizing digital teaching platforms to improve nutrition education in early childhood settings.
